Recipe Ingredients for Marg's Cuban Rice

8 oz Chorizo Sausage
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
5 medium (4-1/8" long) Onions, Spring Or Scallions
48 oz Diced Tomatoes
1 cup Beef Broth
1 cup Rice, White, Long-grain, Regular
1 tsp Marjoram, Dried
3 oz Unico Sliced Black Olives
0.5 cup Frozen Sweet Peas

Recipe Directions for Marg's Cuban Rice

  1. Slice up sausages (easier to do if they're partially frozen) and cook in a dutch oven. Don't drain off fat.

  2. Add diced red pepper when sausages are mostly cooked and cook for a few minutes.

  3. Stir in rice to coat. Add tomatoes, peas, and broth, cover, and cook 15 minutes on low.

  4. Stir in marjoram and chopped green onions, cover, and cook 5 minutes more.

  5. Remove from heat and stir in olives. Serve.
