I removed the tortillas from a recipe I found at the grocery store in order to cut down the calories for this delicious dish. You could also use reduced fat cheese to cut calories even further. It's a family favorite!

Recipe Ingredients for Margi's Enchilada Casserole

2 portions Ground beef (yield from one pound 90% lean ground beef)
1 cup chopped onion
8 oz tomato sauce (2 small cans)
15 oz black beans (1 can), drained and rinsed
8 3/4 oz whole kernel corn (1 small can),undrained
4 1/2 oz green chiles (1 small can), undrained
8 oz reduced fat mild cheddar cheese
2 tsp chili powder
1 tsp ground cumin
1 tsp minced garlic
1/2 tsp oregano
1/2 tsp crushed red chili pepper

Recipe Directions for Margi's Enchilada Casserole

  1. In a large skillet, brown roast beef and onion together until cooked through. Drain thoroughly and return to same skillet. Add tomato sauce, beans, corn and green chiles. Mix well. Add all spices and bring to a boil. Reduce heat to low and simmer for 5 minutes.

  2. Spray a 9x13 baking dish with no-stick cooking spray. Place half of the meat mixture into the pan to cover the bottom, then spread half of the cheese over it. Repeat this process with the remaining meat and cheese. If desired, place spoonfulls of your favorite salsa over the meat mixture before adding the last layer of cheese.

  3. Bake in a 350 degree oven just until heated through, about 15 minutes. Let stand 5 minutes before serving. Enjoy!
