Recipe Ingredients for Margaret's Gingerbread Cake yummy

200 g flora original margarine
1 cup brown sugar
1 cup dried mixed fruit
1 tsp bicarbonate of soda
1 tsp ground ginger
1 tsp mixed spice
1 cup water
1 egg
1 cup self raising flour
125 g wholemeal self raising flour, or a cup

Recipe Directions for Margaret's Gingerbread Cake yummy

  1. Place margarine, brown sugar, dried mixed fruit, bicarbonate of soda, ginger, mixed spice and water in a pan and bring to the boil.

  2. Simmer for 5 minutes then remove from heat and cool.

  3. When cool, add a beaten egg and flour, mix and place in baking tin.

  4. Bake in preheated oven at 160C for 50 to 60 minutes.
