Recipe Ingredients for Margaret Carter's Lasagna

7 3/4 oz. lasagna noodles (9), cooked and well drained (follow box directions)
3/4 lb. (12 oz) shredded mozzarella cheese
1/2 c. grated Parmesan cheese

Sauce:
1 1/2 lb. ground beef (can use less)
3/4 c. chopped onion (can use less)
1 dash garlic powder
16 oz. tomatoes, break up w/ fork
15 oz. tomato sauce
2 tbsp. parsley flakes
2 tbsp. sugar
1 tsp. salt
1 tsp. basil leaves

Filling:
3 c. (24 oz) cottage cheese
1/2 c. Parmesan cheese, grated
1 tbsp. parsley flakes
1 tsp. oregano

Recipe Directions for Margaret Carter's Lasagna

  1. Cook and stir beef until well browned--drain well. In skillet, stir together spices, tomatoes, and onion. Heat to boiling, then simmer uncovered until the consistency of spaghetti sauce, or 45-60 minutes. Stir often.

  2. While sauce cooks, stir together cottage cheese, Parmesan cheese, parsley, and oregano. Refrigerate until ready to assemble lasagna.

  3. In greased 9"x13" baking dish, layer in this order: Noodles, Meat, Mozzarella cheese, Cottage cheese mixture.

  4. Repeat layers, reserving about cup meat mixture for topping third layer of noodles. Sprinkle with cup Parmesan cheese.

  5. At this point, you can cover and refrigerate for later cooking.

  6. Bake uncovered for 45 minutes at 350 oF (add 10-15 minutes if lasagna has been refrigerated). For easier cutting, let stand 15 minutes after removing from oven.
