Easy-to-make chicken and pasta casserole. Fancy enough for company, and it freezes and reheats well, too. This is the regular version. You can reduce the fat/cholesterol by using evaporated milk in place of the cream and olive oil in place of the butter.

Recipe Ingredients for Marcia's Chicken Tetrazzini

2 lbs. chicken breast
1 lb. fresh linguine
2 cans swanson chicken broth
1 cup light cream
1/4 cup butter
2 tbs white flour
1 lb white mushrooms
2 tbs olive oil
3/4 cup grated parmesan cheese
1/2 tsp. nutmeg
1 tsp kosher salt
1/2 tsp pepper

Recipe Directions for Marcia's Chicken Tetrazzini

  1. Simmer chicken breasts in water until tender. Pull apart into pieces (do not shred) and set aside.

  2. Sauté sliced mushrooms in butter )with a dash of salt and some lemon juice if desired) until all the liquid has been aborbed.

  3. Cook fresh linguine in a deep stock pot until tender (I use the water the chicken cooked in, for added chicken flavor). Drain and mix with mushrooms. Put pasta and mushroom mixture in a good-sized casserole dish (I use a 13X9 Pyrex or a 2-qt oval Corningware casserole).

  4. In a large saucepan, cook the flour in the olive oil until it foams. Add the chicken broth, the kosher salt and the spices. Cook until it thickens (it will not get really thick). Add the cream and the chicken pieces and cook through.

  5. Pour over pasta in casserole. Coat with the parmesan cheese.

  6. Bake in 350-degree oven until the casserole bubbles and the cheese is browned.
