Taken from Good Housekeeping Cookbook - modified - used store pie crust instead of making my own

Recipe Ingredients for Marcelli Peach Pie

2 pie crusts, 9 inch
3/4 cup sugar
1/4 cup cornstarch
1 pinch of salt
3 lbs ripe peaches, peeled, cored, sliced
1 tablespoon fresh lemon juice
1 tablespoon butter

Recipe Directions for Marcelli Peach Pie

  1. Preheat oven to 425 degrees.

  2. In a large bowl, combine sugar, cornstarch, and salt. Add peaches and lemon juice, gently toss to combine.

  3. Spoon peach filling into crust; dot with butter. Top with second crust and cut 1 inch slits to allow steam to escape during baking. Make a decorative edge.

  4. Place pie on foil lined cookie sheet to catch any over flow during baking. Bake 20 minutes.

  5. Turn oven controls to 375, bake until filling bubbles in center, 45 to 60 minutes. If necessary cover pie loosely with foil during last 20 minutes of baking to prevent overbrowning.

  6. Cool on wire rack 1 hour to serve warm, or cool completely to serve later
