Recipe Ingredients for Marcelli Peach Cobbler

6 lb. peaches
8 tablespoons sugar, superfine
1 tablespoon lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla or almond extract
1 1/4 cups all-purpose flour
1/2 cup superfine sugar
1 1/2 teaspoon baking powder
1/2 salt
6 tablespoons butter, diced
1 egg
6 tablespoons 2% milk

Recipe Directions for Marcelli Peach Cobbler

  1. Preheat the oven to 425 degrees F. Put the peaches into an ovenproof dish that is also suitable for seeing.

  2. Add the sugar, lemon juice, cornstarch, and almond extract and toss together.

  3. Bake the peaches in the oven for 20 minutes.

  4. Meanwhile, to make the cobbler topping, sift the flour, all but 2 tablespoons of the sugar, the baking powder, and salt into a bowl.

  5. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

  6. Combine the egg ad 5 tablespoons of the milk in a pitcher and mix into the dry ingredients with a fork until a soft, sticky dough forms.

  7. If the dough seems dry, stir in he extra tablespoon of milk.

  8. Reduce the oven temperature to 400 degrees F.

  9. Remove the peaches from the oven, and bake for an additional 15 minutes, or until the topping is golden brown and firm -- the topping will spread as it cooks.

  10. Serve hot or at room temperature with ice cream on the side.
