Great make ahead meal to be reheated. From the kitchen of Grandpa Kirkpatrick. Adjust cooking time and temperature to your oven. Convection cooking will shorten the cooking time.

Recipe Ingredients for Marcelli Oven Beef Stew

6 tablespoon flour, all-purpose
2 1/4 teaspoon salt
1 dash pepper
3 pounds beef chuck, cut in 1" cubes
5 tablespoon olive oil
31 1/2 ounce tomato soup, condensed
5 cups water
2 1/4 cups chopped onion
3/4 teaspoon dried basil, crushed
2 pounds potatoes, pared and cubed
2 pounds carrots, cut in 1" pieces
1 1/4 cup dry red wine

Recipe Directions for Marcelli Oven Beef Stew

  1. Combine flour, salt, and pepper.

  2. Coat meat cubes in seasoned flour.

  3. Brown in hot shortening in small Dutch oven.

  4. Add soup, water, onion, and basil.

  5. Cover and bake in moderate oven (375) about 1 hour.

  6. Add potatoes, carrots, and wine.

  7. Cover and Bake 1 hour longer or until tender. Makes 6-8
