I got this From Fran's House of Ayurveda on Blogspot. I love her site! I fixed this up to suit my dosha, but go to her site to find the right one for you if you are not Vata-Pitta.

Recipe Ingredients for Marakeesh Vegetable Curry (for Vatta-Pitta)

110 g sweet potato, peeled, cubed
98 g green bell pepper, seeded and chopped
98 g red pepper, seeded and chopped
150 g carrots, chopped
100 g onion, chopped
6 tbsp sunflower oil or ghee
18 g garlic, minced
1 tsp turmeric
1 tbsp curry powder
1 tsp ground cinnamon
1/2 tbsp sea salt
1/4 tsp cayenne pepper
2 cups garbanzo beans (chickpeas), fully cooked and drained
1/4 cup almonds, blanched
2 small zucchini, sliced
2 tbsp raisins
1 cup orange juice
3/4 lb bok choy, washed and coarsely chopped

Recipe Directions for Marakeesh Vegetable Curry (for Vatta-Pitta)

  1. In a large Dutch oven or soup pot, place sweet potato, peppers, carrots, onion and 3 tablespoons oil. Sauté over medium heat for 5 minutes.

  2. In a medium saucepan place 3 tablespoons oil, garlic, turmeric, curry powder, cinnamon, salt and pepper and sauté over medium heat for 3 minutes.

  3. Pour garlic and spice mixture into the Dutch oven with vegetables in it. Add the garbanzo beans, almonds, zucchini, raisins and orange juice. Simmer 20 minutes, covered. Add spinach to pot and cook for 5 minutes. Serve!
