Mapo Tofu - modified recipe as found in Personal Trainer: Cooking DS

Recipe Ingredients for Mapo Tofu

445 g Firm Tofu (Cut into small cubes)
456 g (Ground Turkey Breast)
5 g Ginger Root (Minced)
10 g Garlic (Minced)
46 g Spring Onion (Finely Chopped)
1 tbls (Potato Starch dissolved in 2tbls water)
2 tsp Sesame Oil
1 tsp Olive Oil
400 ml (Chicken Stock)
2 tbls Soy Sauce
50 g (Black Bean & Garlic Sauce)

Recipe Directions for Mapo Tofu

  1. Drain and pat dry 1 block of Firm Tofu and cut into small sized cubes.

  2. Mince Garlic and Ginger.

  3. Finely Chop Spring Onion.

  4. Sauce: Mix together Stock, Soy Sauce, and Black Bean Sauce.

  5. Dissolve Potato Starch in Water.

  6. Heat Olive Oil over medium heat and add Ginger and Garlic, cooking until fragrant.

  7. Add Ground Turkey to the pan, breaking up into crumbles and cooking until no longer pink, then add Green Onion.

  8. Add Sauce and bring to a boil over medium heat, then add Tofu.

  9. Thicken with Potato Starch Slurry.

  10. After turning off heat, add Sesame Oil.
