Recipe Ingredients for Mapo Tofu

2 tbsp soy sauce
2 tbsp apple cider vinegar
3 tbsp tomato paste
1 1/2 tbsp black bean garlic sauce
1 tsp sriracha
1/2 tsp red pepper flakes
3 cloves garlic, minced
2 tsp fresh ginger, grated
1 tsp agave nectar
1 c water
1/4 c white wine
8 shiitake mushrooms, sliced
24 oz firm tofu, cubed
3 tbsp cornstarch
1 stalk, medium broccoli, chopped
1 tbsp sesame oil

Recipe Directions for Mapo Tofu

  1. Make the sauce by combining all of the sauce ingredients. Chop the mushrooms, tofu, and broccoli.

  2. Combine the sauce, mushrooms, and tofu in the slow cooker. Cook on low for 6 to 8 hours.

  3. About 45 to 60 minutes before serving, turn up the slow cooker to high. Make a thickener by mixing the cornstarch with some of the sauce from the slow cooker in a small cup, then add it back to the slow cooker.

  4. When the sauce is thickened, add the broccoli and cook until bright green. Right before serving, stir in the sesame oil. Serve over steamed rice.
