Recipe Ingredients for Maple Syrup Roast Chicken

3 pound chicken
2 cups carrots
2 cups onions
1 cup celery
2 cups brussel sprouts
2 cups fat free chicken broth
1 tbsp olive oil
1 tbsp lemon juice
2 tbsp Syrup
1 tbsp old bay seasoning

Recipe Directions for Maple Syrup Roast Chicken

  1. Pre-heat oven to 375 degrees.

  2. Place chicken in roasting pan, breast-side up. Juice one lemon. Pour juice over chicken. Cut left-over lemon rind into 4 pieces and place in cavity of bird. Pour 1 Tbsp of olive oil over chicken. Sprinkle half of the Old Bay seasoning over chicken. Add salt and pepper to taste. Pour 1 Tbsp maple syrup over chicken. Rub all together over chicken.

  3. Turn chicken over. Juice remaining lemon. Pour juice over chicken. Cut left-over lemon rind into 4 pieces and place in cavity of bird. Pour 1 Tbsp of olive oil over chicken. Sprinkle half of the Old Bay seasoning over chicken. Add salt and pepper to taste. Pour 1 Tbsp maple syrup over chicken. Rub all together over chicken back.

  4. Place the carrots, celery, onions, and brussel sprouts in roasting pan surrounding chicken. Pour chicken stock on the vegetables. Add water if necessary, so that they will have enough liquid to cook.

  5. Place roasting pan in pre-heated oven (keeping chicken breast-side down). Roast for 20-30 minutes. Stir vegetables. Turn chicken over so breast is facing up. Roast for 2 -3 hours, basting chicken and stirring the vegetables often.

  6. Remove chicken and let stand for 10 minutes before carving.
