Recipe Ingredients for Maple Roasted Chicken Thighs with Sweet Potatoes

1 tsp Sea Salt
0.5 tsp Black Pepper
1/4 cup Mrs. Butterworth's Sugar Free Low Calorie Syrup
16 oz Sweet Potato
6 oz Onions
12 oz Carrots
20 oz raw Boneless Skinless Chicken Thighs

Recipe Directions for Maple Roasted Chicken Thighs with Sweet Potatoes

  1. Preheat oven to 450.

  2. Cut peeled sweet potato, onions and carrots into 1" chunks.

  3. In a large, shallow roasting pan combine chicken, sweet potato chunks, onion chunks, carrot chunks, maple syrup and salt and pepper, and toss to coat.

  4. Roast chicken mixture for 40-45 minutes until chicken juices run clear when pierced and liquid slightly thickens.

  5. Turn chicken thighs over halfway through cooking time and stir the vegetables at the same time.
