Recipe Ingredients for Maple Pumpkin Pancakes, Race Brook Lodge

3/4 c Quick Cooking Oats
1 1/2 c Skim Milk
2 Eggs
1/2 c Pumpkin
1 tbsp Vegetable Oil
3/4 c All Purpose Flour
1/2 c Whole Wheat Flour
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Pumpkin Pie Spice
1/2 tsp Cinnamon
1 serving Log Cabin Sugar Free Syrup

Recipe Directions for Maple Pumpkin Pancakes, Race Brook Lodge

  1. Combine Oats and Milk in a medium bowl. Let stand for 5 minutes. Add eggs, pumpkin, 3 TBSP of maple syrup, and oil to oat mixture.

  2. Combine flours, baking powder, salt, spice and cinnamon in a large bowl. Make a well in the center of the mixture. Add oat mixture to dry ingredients stirring just until dry ingredients are moistened.

  3. For each pancake, pour 1/4 C of batter onto a hot griddle coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.

  4. Makes 15 pancakes.
