Recipe Ingredients for Maple Pumpkin Butter

29 oz. pumpkin
3/4 cup sugar
3/4 cup apple cider
3/4 cup maple syrup
1 1/2 tsp cinnamon
1 1/2 tsp ginger

Recipe Directions for Maple Pumpkin Butter

  1. Pre heat oven to 350

  2. Put all ingredients into a large, heavy ovenproof casserole and stir to blend.

  3. Place the pan over medium-low heat and bring ot a boil, stirring all the while.

  4. Lower the heat and, still stirring, cook 5 min more.

  5. Slide the casserole into the oven and cook, sitrring every 15 min, until the pumpkin butter has thickened and there is no liquid. 1 1/2- 2 hrs.

  6. Cook the pumpkin butter, then cover and chill. Packed airtight, it will keep for a week in the fridge.
