Lowfat whole wheat oatmeal muffins sweetened with maple syrup

Recipe Ingredients for Maple Oatmeal Muffins

1 cup lowfat milk
1 cup oats
1/4 cup maple syrup
58 g (1 extra-large) egg
1/4 cup natural applesauce
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon

Recipe Directions for Maple Oatmeal Muffins

  1. Preheat oven to 425 degrees fahrenheit

  2. Grease a 12-cup muffin pan or line with paper muffins cups

  3. In a small bowl, combine milk, oats, and maple syrup; let soak for at least 15 minutes

  4. In a large bowl, beat together the egg and the applesauce

  5. Stir in the oatmeal mixture

  6. In a separate bowl, combine flour, baking powder, salt and cinnamon

  7. Stir flour mixture into wet ingredients just until combined

  8. Spoon batter into prepared pan and bake 20-25 minutes or until a toothpick inserted in the center comes out clean
