This bread is adapted from www.thefreshloaf.com's recipe for maple oatmeal bread. The modifications are switching some of the regular flour with whole wheat and the addition of two tablespoons of soy flour (instead of regular flour) and one tablespoon of wheat germ. I brushed the unbaked loaves with an egg/water mixture and sprinkled rolled oats over that just before popping the bread into the oven.

Recipe Ingredients for Maple Oatmeal Bread

1 cup rolled oats
1 package dry yeast
3/4 cup maple syrup
2 tsps salt
1 tablespoon vegetable oil
3 1/2 cups unbleached flour
2 cups whole wheat flour
2 tbsp soy flour
1 tbsp wheat germ

Recipe Directions for Maple Oatmeal Bread

  1. Put oats in large bowl. Pour 2.5 cups boiling water over the oats and set aside for one hour.

  2. Mix yeast, syrup, salt, and oil into the oats.

  3. Mix flours together.

  4. Mix three cups of the blended flours into the oats mixture. Cover bowl and let rise for an hour.

  5. Add flour, 1/2 cup at a time, until dough is correct consistency for kneading. Knead for ten minutes.

  6. Cut dough into two pieces, shape into loaves, and place in greased loaf pans. Cover and let rise for another 45-60 minutes.

  7. Bake at 350F for 40-50 minutes.
