Tasty muffins. Very light and fluffy.

Recipe Ingredients for Maple Muffins

3 serving Flour
3 serving Flour
12 tsp SPLENDA Sugar Blend for Baking
0.25 cup Butter
1/2 cup dry Old Fashioned Quaker Oats
0.75 cup Pure Maple Syrup
0.25 cup Soymilk Light Plain
0.25 cup Soymilk Light Plain
1 medium Egg, Whole
0.5 tsp Salt, Table
1 tsp Cinnamon, Ground

Recipe Directions for Maple Muffins

  1. 1. Preheat oven to 400 degrees F

  2. 2. Sift together flour, sugar, baking powder, cinnamon, nutmeg and salt (I mixed together with a fork).

  3. 3. Cut in shortening until mixture resembles coarse crumbs.

  4. 4. Stir in oats

  5. 5. Add egg, milk and syrup only until dry ingredients are moistened.

  6. 6. Fill greased muffin tins full and bake 18-20 minutes (or until a toothpick inserted comes out clean).

  7. 7. Let stand a few minutes before removing muffins from the pan.

  8. 10-12 servings (the recipe said 12, but I only got 10 muffins out of it).
