Recipe Ingredients for Maple-Glazed Winter Squash with Garlic and Ginger

2 tbsp olive oil
1 small onion, thinly sliced
4 garlic cloves, thinly sliced
1 tbsp fresh ginger, peeled and thinly sliced
2 tbsp water
1 tbsp tamari
3 c or 1 butternut squash, halved, seeded, and peeled
1/3 c pure maple syrup
2 tbsp brown sugar, firmly packed

Recipe Directions for Maple-Glazed Winter Squash with Garlic and Ginger

  1. Spread the oil in the bottom of a 4-qt slow cooker. Arrange the onion slices over the oil, followed by the garlic and ginger. Combine the water and tamari and add to the cooker.

  2. Cut the squash into 2-inch chunks and place them on top of the vegetables in the cooker. Pour the maple syrup over the squash, sprinkle with the brown sugar, and season with salt and pepper.

  3. Cover and cook on Low for 6 hours, until the squash is soft. Serve hot.
