Recipe Ingredients for Maple Cornbread

1 1/4 cups all purpose flour
1 1/4 cups cornmeal
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1/4 cup butter
1/4 cup maple syrup
1 1/4 cups buttermilk
3/4 cup sweet corn

Recipe Directions for Maple Cornbread

  1. Preheat oven to 350F. Lightly grease a 99 inch baking pan or a Baker?s Edge pan (my preference).

  2. In a large bowl, whisk together flour, cornmeal, baking powder, baking soda and salt.

  3. In a small bowl, whisk together eggs, butter, syrup and buttermilk. Pour into dry ingredients and stir until just combined.

  4. Mix in corn kernels and pour batter into prepared pan.

  5. Bake for 25-30 minutes, until a tester inserted into the center of the cornbread comes out clean and the top springs back when lightly pressed. A 99 pan may take an additional couple of minutes.

  6. Cool in pan before slicing.

  7. Can be served with maple butter: Mix a little maple syrup in with whipped butter.
