Light and fluffy whole wheat bran muffins with a maple syrup and chai flavor.

Recipe Ingredients for Maple and chai bran muffins

1 1/2 cups wheat bran
1/2 cup oats
1 cup vanilla soy milk (use to brew 2 chai tea bags)
1 1/4 cup whole wheat flour
3/4 cup Splenda no calorie
1/2 cup sugar free syrup
1/2 cup non-fat powdered milk
1 egg
1 tbsp vegetable oil
1/2 cup unsweetened applesauce
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts

Recipe Directions for Maple and chai bran muffins

  1. Preheat oven to 400 degrees F.

  2. Stir together flour, Splenda, powdered milk, baking powder, baking soda, and salt in a bowl.

  3. In large mixing bowl, combine bran, oats and soy milk. Cover bran and oats as much as possible; let stand for 5-10 minutes.

  4. Once bran is softened, add egg, oil, applesauce, and nuts to bran/oats mixture. Mix until well combined.

  5. Once bran mixture is combined, add flour mixture, mixing until just combined. Do not overmix.

  6. Fill muffin tins 3/4 full.

  7. Bake for 20-25 minutes or until tops are golden brown or toothpick inserted in center comes out clean.
