Recipe Ingredients for Maple Banana Oatmeal

1 1/2 c oats
1/4 tsp salt
3 c water
1/2 c unsweetened soy milk
1 banana
2 tbsp maple syrup
1/2 tsp ground cinnamon

Recipe Directions for Maple Banana Oatmeal

  1. In a pot, combine the oats, salt, and water, and bring to a boil. As soon as the mixture begins to bubble vigorously, reduce the heat to low, stir well, cover and continue to cook for 5 minutes, stirring to prevent sticking if needed.

  2. Meanwhile, in a blender, whirl the soy milk and banana until smooth. Stir the banana mixture, maple syrup, and cinnamon into the oatmeal and continue to cook on low heat, stirring frequently, for 3 or 4 more minutes.

  3. Top each serving with toasted almonds or other nuts if you'd like.
