3 ripe bananas, mashed
1/2 cup pure maple syrup
1/4 cup canola oil
1/4 cup apple sauce
1/4 cup soy milk
1 tsp apple cider vinegar
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp nutmeg
1/2 tsp salt
2 cups whole wheat pastry flour

Recipe Directions for Maple Banana Bread

  1. 1. Preheat the oven to 350 F. Grease an 8 x 4 loaf pan generously.

  2. 2. In a medium bowl, stir together bananas, maple syrup, canola oil, apple sauce, milk, vinegar, and vanilla until well combined.

  3. 3. In a small bowl, sift together baking soda, nutmeg, salt, and flour.
