Pork stir-fry with a sweet, tangy sauce. The recipe is from "Ultimate Kitchen Companion" cookbook. The recipe calls for 3 red Asian shallots...I used 3 regular shallots, but put in 1 onion below as shallots would not appear in the nutritional info. Also, it calls for 2 T palm sugar (I substituted 2 T brown sugar moistened with 1/2 tsp maple syrup).

Recipe Ingredients for Mao Paht King

3 T peanut oil
1 clove garlic
16 oz pork
2 T ginger
1 small onion
1 red pepper
4 spring onions
3 1/2 oz snow peas
2 T soy sauce
2 T fish sauce
2 T brown sugar
1/2 tsp maple syrup
2 T lime juice
2 T cilantro (coriander)
2 cups white rice, uncooked

Recipe Directions for Mao Paht King

  1. Heat a wok over high heat. Add 1 T of the oil and swirl to coat the side of the wok. Add the garlic and cook for 30 seconds.

  2. Cook the pork in batches and stir-fry each batch for 1-2 minutes, or until lightly browned. Remove from wok.

  3. Heat the remaining oil in the wok, add the ginger and shallots and stir-fry for 1 minute, or until the shallots are tender.

  4. Add the pepper, spring onion and snow peas. Stir-fry for a further 1 minute, then return the pork to the wok.

  5. Combine the soy sauce, fish sauce, palm sugar and lime juice, then add to the wok. Stir in the coriander and stir for 1 minute until combined and the pork is heated through.

  6. Garnish with ginger and serve over rice.
