Manicotti with Ricotta and Parmesan

Recipe Ingredients for Manicotti with Ricotta and Parmesan


For the shells:
1/2 cup flour
1/4 cup egg beaters
3/4 cup skim milk
1 pinch nutmeg
1 pinch salt

For the sauce:
1 tsp olive oil
1/4 tsp fennel seeds
4 ounces onion, chopped
28 4/5 ounces no salt added canned whole tomatoes
1 salt
1 pepper

For the filling:
2 cup fat free ricotta
10 ounces spinach
2 ounces parmesan
1/4 tsp nutmeg
1 pinch black pepper

Recipe Directions for Manicotti with Ricotta and Parmesan

  1. To make the shells, make crepes.

  2. To make the sauce, make tomato soup and reduce it a bit.

  3. To make the filling, cook the spinach in the microwave and combine all.

  4. Preheat oven to 350. Fill shells with filling and place in a baking dish, seam side down. Top with sauce. Bake for 45 minutes.
