Family manicotti shell recipe Italian cookbook for tomato sauce and manicotti filling

Recipe Ingredients for Manicotti

4 cups fat free ricotta cheese
1 cup reduced fat mozzarella
1 cup parmesan cheese
4 egg whites
1 cup yellow onions, diced
1 clove garlic, minced
2 tbsp olive oil
32 oz. italian tomatoes
12 oz tomato paste
1 tsp basil
1/2 tsp oregano
12 egg whites
3 cups whole wheat flour
3 cups water
1/2 tsp salt

Recipe Directions for Manicotti

  1. Make sauce by heating oil in saucepan; add garlic and saute stirring constantly. Add minced onion. Saute until soft, but do not brown. Place tomatoes, paste, basil, oregano, salt and pepper to taste. Simmer gently uncovered 1&1/2 hours, stirring occassionally, until the sauce is smooth and thick.

  2. While sauce is simmering, make shells by combining 4 egg whites, flour, salt, water. Beat until smooth. Let stand 1/2 hour or longer. Slowly heat 8" skillet. Pour in 3 Tbsp batter, rotating skillet quickly to spread batter evenly over bottom. Cook over medium heat until top is dry but bottom is not brown (no need to flip). Turn out onto wire rack to cool. Stack with wax paper between.

  3. Combine ricotta parmesan and mozzarella cheeses with salt and pepper to taste. Add 4 egg whites, beat together until smooth. Place equal amount of ricotta filling on each shell and roll up.

  4. Place 1/2 cup of sauce in bottom of baking pan, spread evenly. Place rolled shells, seam side down, in baking dish. Rolls will have to be stacked in layers. Once one layer is complete, pour 1/2 cup sauce over the shells before placing the next layer. Pour remaining sauce over the top layer. Sprinkle 1/2 cup grated parmesan cheese over the top.

  5. Bake in a preheated 400F oven for 20 min, or until sauce begins to bubble.
