Recipe Ingredients for Manicotti

16 eggs
2 3/4 c. flour
3 c. water
2 1/4 lb. whole milk ricotta cheese
3/4 lb mozzarella cheese
8 oz Romano cheese
45 oz tomato puree
5 oz mushrooms
1 1/2 celery stalks
2 cloves garlic
1/2 medium onion
3 oz tomato paste
1 oz basil

Recipe Directions for Manicotti

  1. To make shells combine 11 eggs, flour, and water. Pour thin layer (like a crepe) onto heated nonstick skillet.

  2. To make cheese mixture combine remaining eggs, ricotta, mozzarella, & Romano cheeses.

  3. Puree the whole vegetables & make spaghetti sauce with remaining ingredients.
