microwave recipe found on a page ripped from a cookbook (don't know which one). I use two pkgs of manicotti (12 per pkg) May be frozen and reheated. Substitute and make Lasagne instead of manicotti, sprinkling additonal cheeses over top during last 5 minutes of final heating.

Recipe Ingredients for Manicotti (the BEST)

16 oz. manicotti, cooked per pkg instructions
1 1/2 lb. lean ground beef
1 lb. Italian sausage, sweet or hot, removed from casing
2 medium onions, finely chopped
5 garlic cloves, minced
32 oz. spaghetti sauce, chunky style
15 oz. tomato sauce
2 tsp. dried basil
2 tsp. dried oregano
2 tsp. sugar
1 tsp. dried marjoram
1 tsp. dried thyme
1 tsp. pepper
4 beef bouillon cubes
1 1/2 lb. cottage cheese
1 lb. mozzarella cheese, shredded
2/3 cup parmesan cheese, freshly grated
2 large eggs
1 pkg. frozen spinach, thawed and well drained

Recipe Directions for Manicotti (the BEST)

  1. Drain cooked manicotti, place in a bowl of cold water, and set aside

  2. Meat Sauce

  3. Place meat, onions and garlic in a 4 qt. casserole. Cover and cook on HIGH 5 minutes. Stir, cover, and cook on HIGH 5 - 7 minutes, or until meat is almost cooked. Stir and drain all fat.

  4. Add spaghetti sauce, tomatoe sauce, sugar and spices and bouillon cubes. Microwave on HIGH 10 - 15 minutes, or until boiling.

  5. Cheese Filling

  6. Combine filling ingredients, stirring until well mixed. Stuff manicotti shells with filling. Put 1 cup meat sauce on bottoms of two 9 x 13 inch casserole dishes. Arrange manicotti in single layer over sauce and cover with remaining sauce.

  7. Cover and microwave each casserole separately on 70% power 15 to 20 minutes or until hot in centre. (When serving this entire recipe at once, it is more efficient to heat both dishes at once in a conventional oven. Bake 20 to 30 minutes at 350 F.)
