Low-cal spicy clam chowder, easy to make. Can easily omit butter for even fewer calories, and can substitute diced tomatoes for the salsa for less zest. Goya's Sofrito or Recaito soup bases can be added for excellent effect, but I could not find them listed here.

Recipe Ingredients for Manhattan Clam Chowder

16 oz Chopped Celery
16 oz Chopped Onions
2 oz Fat Free Italian
1 oz Butter
16 oz Salsa
32 oz Chopped Clams
16 oz Diced Potatoes

Recipe Directions for Manhattan Clam Chowder

  1. To a medium/large pot add:

  2. 16oz Chopped Celery

  3. 16oz Chopped Onions

  4. 2oz Fat Free Italian Dressing

  5. 1oz Butter (optional)

  6. Sofrito and/or Recaito (Goya)(optional)

  7. Spices to taste ( I usually use Sage, Cumin, Adobo, Rosemary, Thyme, Cilantro, Italian, etc...)

  8. Cook over medium/high heat stirring often until onions start to become translucent.

  9. Reduce heat to medium low.

  10. Add the juice from the chopped clams jar, but reserve the clams.

  11. Add the salsa and potatoes

  12. Return to a slow boil for 1/2 hour.

  13. Add Clams

  14. Transfer to crock pot and simmer, the longer it simmers the better it gets.
