Recipe Ingredients for Manhattan Clam Chowder

2 cans minced clams
1 1/2 cup water
8 oz clam juice
14 1/2 oz diced tomatoes
1 cup chopped onions
3 potatoes, chopped
1/2 cup chopped carrots
1 tsp salt
1 tsp black pepper
1/2 tsp thyme

Recipe Directions for Manhattan Clam Chowder

  1. Drain clams, reserve liquid. Add enough water to reserved liquid to make 3 cups of stock

  2. In large saucepan pour add liquid, bottle clam juice, undrained tomatoes, onions, potatoes, carrots, salt, pepper and thyme. Cover and simmer for 30 to 35 minutes.

  3. Remove pan from heat. Mash vegetable slightly to thicken broth. Add clams to saucepan and heat through.
