Recipe Ingredients for Manhattan Clam Chowder

4 oz. bacon (cut up)
19 1/2 oz. minced clams, drained (reserve liquid)
28 oz. tomatoes (with liquid)
1 c. tomato juice
8 oz. clam juice
3 c. peeled, diced potatoes
1 c. diced celery
1 c. diced carrots
1 c. sliced onion
2 tbsp. chopped parsley
1 tsp. thyme
1/2 tsp. oregano
1/2 tsp. black pepper

Recipe Directions for Manhattan Clam Chowder

  1. Place bacon in 3 quart microwaveable bowl and microwave uncovered 2 minutes. Stir reserved clam liquid into bacon drippings. Set clams aside. Add rest of ingredients except clams and microwave covered 12 to 14 minutes or until vegetables are tender.

  2. Add clams, stir gently. Microwave 2 to 3 minutes longer. Let stand covered several minutes before serving.
