Mangu and Fried Egg Recipe

Mangu is basically green plantain smashed with oil and water.

Recipe Ingredients for Mangu and fried egg

1 serving Platano Verde
1 tbsp Olive Oil
1 pat (1" sq, 1/3" high) Butter
1 large Egg, Whole
1 oz Onions

Recipe Directions for Mangu and fried egg

  1. 1. Peel and boil the plantain in salty water for 15-30 mins, until it's tender.

  2. 2. Smash the plantain with a fork, then add olive oil (or/and butter), mix, then add cold water and keep smashing until you get a soft puree.

  3. 3. Fry some onions and when done add some vinegar to the pan.

  4. 4. Add the onions on top of the mangu and your done.

  5. Optional:

  6. You can serve it with fried eggs, fried salami or ham, fried cheese or could add into the puree some shredded cheddar cheese or bacon.. get creative :)
