Recipe Ingredients for mango shrimp stir fry

1 lb shrimp, peeled and deviened
1 mango
1 green pepper
1 onion
2 cloves garlic
1 tsp grated ginger
1 c water
2 tbsp low sodium soy sauce
2 tbsp honey
1 tsp orange zest
1 tbsp corn starch
1 tbsp coconut oil

Recipe Directions for mango shrimp stir fry

  1. heat coconut oil until liquified. add chopped onion, garlic, green pepper, ginger and mango and saute for about 5 minutes.

  2. Add shrimp. Cook until pink but not fully cooked.

  3. Add water, honey, soy, and orange zest. dilute corn starch in 1 tbsp cold water and add to mixture.

  4. heat until thickened. Add red pepper flakes if spice is desired.
