2 tablespoon olive oil
1 mango, diced
20 oz pineapple tidbits, drained
1 cup edamame, shelled
1 cup salsa
1 cup cilantro, chopped
15 ounce can black beans, drained
1 cup tomatoes, diced
14 g jalapeno, seeded and diced

Recipe Directions for Mango Sausage and rice (4 servings)

  1. Cook Rice

  2. Chop sausage and brown

  3. saute with pineapple and edamame 5 minutes

  4. toss with salsa and black beans

  5. heat through

  6. top with mango cilantro tomato and jalapeno
