This looks a bit odd.. (More like Caesar dressing with Parm in it than a super smooth dressing) But it tastes amazing on a simple salad. Add a few leaves of mint (or a few drops of extract), for better flavor.

Recipe Ingredients for Mango Salad "dressing"

2 c Mangos, diced
1 c Grapes (red), halved
3 tbsp Lemon Juice
1/4 c White Wine Vinegar
1/8 c Olive Oil
2 tsp honey

Recipe Directions for Mango Salad "dressing"

  1. Peel and Dice Mangos, placing half in blender or food processor.

  2. Add Everything except grapes to blender and puree.

  3. Halve grapes and add to remaining diced mango, Cover in puree and mix to coat.

  4. Add to salad of your choice and enjoy.
