Recipe Ingredients for Mango Rice

1/2 cup dried mango
1 small onion, chopped
1 cup basmati rice
14 oz chicken broth
3/4 cup water
1 tsp basil
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp cayenne pepper
1/4 cup toasted pine nuts

Recipe Directions for Mango Rice

  1. Toast pine nuts in oven until slightly brown.

  2. Bring chicken broth to a boil; add mango, water, salt, onion and rice. Cover and let simmer until rice has absorbed the rice.

  3. Add basil, cumin, chili powder, cayenne pepper and pine nuts to cooked rice.

  4. Serve.
