Sweet-and-spicy Thai style stir fry

Recipe Ingredients for Mango Peanut Noodles

8 oz (1 package) shirataki
1/4 mango, diced
1 celery stalk, small
1 tbsp chives, chopped
2 tbsp natural chunky peanut butter
1 egg
1/2 tbsp olive oil
2 tbsp soy sauce
1 tbsp mirin
5 g sriracha sauce

Recipe Directions for Mango Peanut Noodles

  1. Oil a frying pan with the olive oil. Set on medium-high heat.

  2. Drain shirataki, add to pan.

  3. Add soy sauce and mirin.

  4. Add peanut butter, stir in.

  5. Add mango, celery and chives once sauce is reduced. Cook for 3 minutes, stirring occasionally.

  6. Beat egg.

  7. Push ingredients to side. Add egg to exposed pan surface and stir it while it hardens.

  8. Mix egg in with noodles.

  9. Top with sriracha sauce.
