This Mango Mousse recipe uses fresh mango and it gets its shape from unflavored gelatin and its lightness from whipped cream and stiffly beaten egg whites.

Recipe Ingredients for Mango Mousse

24 cups of mangos
1 1/2 cup lemon juice
2 envelopes of unflavored gelatin
1 1/2 cup sugar
11 cups of heavy cream
25 egg whites
1 1/2 cup hot water

Recipe Directions for Mango Mousse

  1. Dissolve gelatin in lemon juice and water, set aside to cool

  2. Process the mangos with the sugar until the mixture is a smooth puree.

  3. Stir in gelatin, and chill for 15 minutes

  4. Whip the heavy cream

  5. Beat egg whites separately until stiff.

  6. Fold whipped cream and fluffy egg whites into the mango mixture

  7. Dish out in serving cups

  8. Chill until completely set.
