Recipe Ingredients for Mango Coconut Cupcakes

1 1/2 cups flour
1/2 cups sweetened flaked coconut
1 1/2 tsp baking powder
1/4 tsp salt
1 cup splenda
1/2 cup butter, unsalted, melted
2 eggs
1/4 cup milk
1 cup mango, chopped

Recipe Directions for Mango Coconut Cupcakes

  1. Preheat oven to 350 F.

  2. Line muffin pan with paper liners.

  3. Mix together flour, coconut, baking powder, and salt.

  4. Whisk together splenda, butter, and eggs untl smooth.

  5. Alternately whisk in flour mixture and milk.

  6. Stir in mango.

  7. Bake for 20 to 25 minutes.
