Sweet, savory and very filling Chicken and Mango dish

Recipe Ingredients for Mango Chicken Curry

14 oz 1 can lite coconut milk
6 oz 1 can tomato paste
1 1/2 cups diced mango (one medium sized mango)
1/2 cup onion, diced
2 tbs extra virgin olive oil
1 large red bell pepper, diced
1 red jalapeno pepper, diced (or more to taste)
1/2 tsp salt
1 tsp ground ginger
1/8 tsp ground cayenne pepper
1 tbs curry powder
8 oz boneless skinless chicken breast diced into chunks
1 tbs garlic powder
1 tbs paprika

Recipe Directions for Mango Chicken Curry

  1. 1 In a mixing bowl, combine coconut milk, tomato paste, curry powder, ginger and salt and whisk until blended

  2. 2 In a ziplock bag or container, toss chicken with garlic powder and paprika until evenly coated

  3. 3 Brown diced onion (with a sprinkle of paprika) with cooking spray in cast iron skillet or a deep frying pan

  4. 4 add olive oil and chicken to skillet and saute about two minutes

  5. 5 add peppers to skillet and saute another two to three minutes

  6. 6 Add liquid ingredients and mango to skillet

  7. 7 Bring to a simmer and cook for another ten to fifteen minutes until chicken is cooked through

  8. 8 Serve over brown and wild-grain rice with a side of green beans with butter and scallion or a green salad

  9. Remove from heat and add olive oil to pan
