south seas curry - not too hot, but tasty

Recipe Ingredients for mango chicken curry

2 tbsp vegetable oil
1 large onion
1/2 bell pepper
2 cloves garlic
2 tbsp minced ginger
2 tbsp curry powder
1/2 tsp cumin
2 mangoes
2 tbsp cider vinegar
1 1/4 cup water
1 1/4 pounds boneless chicken breast
1/3 cup golden raisins
1/2 cup 1% milk

Recipe Directions for mango chicken curry

saute onion in oil; add garlic, ginger, bell pepper, saute; add spices; add 1 mango and continue to saute; add vinegar, water, chicken breast & raisens; simmer for 10 minutes; reduce heat to low & stir in milk, cube other mango and stir in; and serve over rice.
