Recipe Ingredients for Mango Chicken Bake

2 tsp olive oil
3/4 lb chicken, breast, meat only (tenderloins)
1/2 cup onion, chopped
1 T garlic, minced
1 1/2 cups water
1/2 cup uncooked white rice
1 mango, large, chopped (aprox 1 cup)
1/2 cup fresh cilantro, chopped
1 green onion, chopped
1 T fresh ginger, minced
1 tsp red curry paste
1 tsp chicken broth
1 tsp tarragon vinegar

Recipe Directions for Mango Chicken Bake

  1. Preheat oven to 350 degrees. Coat a baking dish with spray coating.

  2. Heat olive oil in a large skillet over medium heat and cook the chicken until lightly browned. Stir in the onion, cook and stir until translucent, about 3 minutes. Stir in garlic cook an additional minute. Remove from heat.

  3. Combine water and rice in the prepared baking dish. Combine the chicken, onion and garlic, along with any pan juices, with the rice. Stir in mango, cilantro, green onion and ginger. In a small bown mash the red curry paste with the chicken broth and tarragon vinegar to make a thin paste. Stir into the dish. Cover with foil and bake about 1 hour, until veggies are tender and rice is cooked.
