This is a very dense moist cake. Delicious, but it does have an odd texture, almost like a flourless cake. Recipe from http://www.charleslife.com/blog/vegan-lemon-mango-coconut-cake

Recipe Ingredients for Mango cake

2 cups all purpose flour
1 cup brown sugar
1 teaspoon baking soda
1 tablespoon salt
1/3 cup canola oil
1 teaspoon vanilla
1 teaspoon white vinegar
3/4 cup water
3/4 cup water
1 fresh mango
2 tablespoons coconut oil
1 1/2 cups icing sugar
1/4 cup orange juice

Recipe Directions for Mango cake

  1. Mix flour, brown sugar, baking soda and salt in a mixing bowl.

  2. Blend oil, vanilla essence, vinegar, water and mango in blender and then add to mixing bowl.

  3. Stir until combined and pour into cake tin.

  4. Bake at 180C for aproximately 30 mins or until done.

  5. Allow cake to cool and the mix up coconut oil and icing sugar in a bowl and add orange juice until the consistency is spreadable. You may want to heat up the coconut oil a little to begin with as it's hard to blend at room temperature.

  6. Spread icing over cake and allow to set before cutting into slices.

  7. Be aware that the coconut flavour in the icing can be a little overpowering. If you're not a big fan of coconut you may want to skip adding this.
