New take on an old favorite - using mashed mango instead of mashed bananas to create a fruit bread.

Recipe Ingredients for mango bread

1 1/2 fruit without refuse Mangos
8 oz Neufchatel Cheese
3/4 cup Butter
3 cup Gold Medal All Purpose Flour
2 large Egg, Whole
2 cup Sugars, Granulated
1/2 tsp Vanilla Extract
1/2 tsp salt

Recipe Directions for mango bread

Peel mangos and remove seeds; mash using food processor or blender. In large bowl, beat together cream cheese, butter and sugar until fluffy. Beat eggs with fork, add vanilla, and blend into mixture. In separate bowl, mix together flour (pack when measuring), baking soda, baking powder and salt. Slowly mix dry ingredients into wet ingredients until combined. Spoon into two well-greased loaf pans. Bake at 350 for 1 hour. Let cool in pans 15 minutes, then remove to wire rack to cool completely.
