Recipe Ingredients for Mango Black Bean Quinoa (Trader Joe's Recipe)

1 cup Quinoa , dry, red
15 oz Organic Black Beans
1 cup Fresh Frozen Mango Chunks
1 Red Bell Pepper, chopped
2 Green Onions, sliced
1/4 cup Cilantro, chopped
1/4 cup Extra Virgin Olive Oil
1 tbsp lime juice
1/2 teaspoon lime zest

Recipe Directions for Mango Black Bean Quinoa (Trader Joe's Recipe)

  1. Boil the desired amount of quinoa uncovered in 4 times as much water (1 cup quinoa/4 cups water) for 15 minutes. When it's done, drain the quinoa in a fine mesh strainer, put an inch of water back into the pot and put the strainer with the quinoa on top. Place the pot lid on top of the strainer, wrapped in a kitchen towel (put the towel over the strainer, put the lid on, then wrap the towel over the lid). Bring the water back to a boil, and steam the quinoa for 10 minutes.

  2. This produces a much lighter, fluffier quinoa than just boiling it in water.

  3. In a large bowl, combine cooked quinoa, black beans, mango, bell pepper, green onions and cilantro. In a separate smaller bowl, whisk olive oil, lime zest and lime juice. Drizzle over quinoa salad and toss to distribute evenly. Add salt and pepper to taste. Chill and serve.
