Pulled the idea for this salad from here: http://rawon10.blogspot.com/ In retrospect, I should have added more spinach, but it was tasty nonetheless

Recipe Ingredients for Mango Avocado Salad

5 1/2 oz baby spinach (about 1 package)
7 3/5 oz mango, cut into small cubes (1 large mango)
6 oz tomato, diced (I used 2 roma tomatoes)
2 3/5 oz avocado, cubed (1 small one)
3 1/5 oz red onion, diced (about a 1/4 medium sized onion)
21 g agave nectar (about 1 tbsp)

Recipe Directions for Mango Avocado Salad

  1. Add all the ingredients to a bowl.

  2. For a dressing I used the juice from 1 lime, the agave nectar, a few pieces of the cut up mango, black pepper, cayenne pepper and red pepper flakes. I blended them all together until it was liquidy and poured over the salad.

  3. I mixed everything all up then let it sit in the fridge for about 10 - 15 mins so the flavors would soak into the spinach
