Also known as Pig Pickin Cake or Pea Pickin cake, light and refreshing! Great any time but especially on a hot summer day.

Recipe Ingredients for Mandarin Orange Cake

18 1/4 oz yellow cake mix
4 egg whites
1/2 cup unsweetened applesauce
11 oz mandarin oranges
3 1/2 oz instant vanilla pudding
20 oz crushed pineapple with juice
12 oz cool whip

Recipe Directions for Mandarin Orange Cake

  1. Mix cake mix, eggs, applesauce and oranges.

  2. Beat on high about 6 minutes.

  3. Divide batter into 3 greased 9" pans

  4. Bake 15-20 minutes at 325 degrees, or until cake is done.

  5. Let cool.

  6. Mix pudding and pineapple with juice, fold in a large tub of whipped topping.

  8. Refrigerate at least 2 hours before serving
