Omelet made with mixed mushrooms and sheep's milk manchego cheese.

Recipe Ingredients for Manchego Mushroom Omelet

6 egg Eggs
1.5 cup Mixed Mushrooms
1 medium raw Onion Yellow
1.5 tbsp Olive Oil
0.13 tsp Nutmeg, Ground

Recipe Directions for Manchego Mushroom Omelet

  1. Chop onion.

  2. Heat oil in pan and add onion.

  3. Saute onion until partially translucent.

  4. Add mushrooms, wine, a sprinkle of nutmeg, and salt and pepper to taste.

  5. Cook this mixture together for 6-8 minutes.

  6. Set sauteed mushrooms aside.

  7. Whisk eggs with remaining nutmeg and desired amount of salt and pepper in large bowl.

  8. Heat oil in pan over medium high heat and add eggs (you may add half of eggs and prepare 2 smaller omelets or if using a large pan you may do one large omelet.)

  9. Once eggs are about 75% cooked add mushroom mixture and manchego.

  10. Fold in half and let outside brown slightly.

  11. Serves 2-4.
