The vegetarian version of a great dish with eggplants

Recipe Ingredients for Mancarica de vinete

2 kg eggplant
4 tbs olive oil
1 onion, big
5 tomatoes
1 tbs flour
1 salt, pepper, oregano and mint to taste

Recipe Directions for Mancarica de vinete

  1. Chop the onion and fry it in the olive oil. Add salt, pepper, the spices and the eggplant cut in small bites. Add the tomatoes and cover the pot.

  2. Let it boil until the eggplant is softened and slightly brown.

  3. Add the flour and stir continuously for another 5 minutes.

  4. You can serve it with plain or Greek yoghurt, sour cream or freshly cut parsley.
