1 kg eggplant
500 g chicken breast
2 tbs olive oil
3 tomatoes, big
1 salt, pepper, oregano and mint to taste
1 tbs flour, white, all-purpose

Recipe Directions for Mancarica de vinete cu piept de pui

  1. Cut the chicken breast in small pieces and fry it in the olive oil. Add salt, pepper, the spices and the eggplant cut in small bites. Add the tomatoes and cover the pot.

  2. Let it boil until the eggplant is softened and slightly brown.

  3. Add the flour and stir continuously for another 5 minutes.
